

Harvest
With the vines growing in different areas and with the use manual harvesting, the beginning of individual harvest is chronologically fitted to the ripeness and sanitary condition of the grapes. Generally the harvest in Santomas takes place between September 20th and October 15th, late harvest and grape selection being even later on. Harvest itself depends to the weather conditions, while grapes are usually harvested in earyl morning or late afternoon. All Santomas wines are produced of healthy grapes with record high sugar levels. Before vinification additional selection of the grapes is made with the system "viniclean", followed by a manual selection at the assembly line.
Enabling even higher quality of the final product, in the future the traditional harvest will be replaced by Champagne harvest.
